The fruit
The papaya is a large pear shaped fruit that looks a bit like a large mango, with bright golden-yellow skin. The skin is waxy and thin but fairly tough. On the inside, its bright orange flesh is juicy and silky smooth with a sweet-tart flavour. Some liken the flavour to melon and apricot. The large center cavity is filled with shiny, black seeds about the size of peas. These black seeds are edible and have a sharp spicy peppery taste. They are generally discarded, but sometimes ground up and used as a substitute for black peppers.
