Tasty ways to add some lutein rich papaya into your life

Here are a few simple recipes to get you started:


Smoked Chicken & Papaya Salad

A fresh, light summer salad, perfect for al fresco dining or a light lunch.

Method

1. Trim the beans and cut them in half. Bring a pan of lightly salted water to the boil and cook the beans for 3 minutes, drain and refresh under cold running water.

 2. Use 2 forks to shred the chicken into small pieces. Peel and cut the onion. Peel the papaya, slice in half and scoop out the seeds using a small teaspoon. Thinly slice the papaya and place in a large bowl with the cooked beans, shredded chicken, sliced onion, bean sprouts and watercress. Toss together thoroughly and divide between 4 individual serving plates.

3. To prepare the dressing, place all the ingredients in a screw top jar, shake well for a minute and drizzle generously over the salad before serving.

Ingredients:

  • 100g/4oz fine green beans
  • 350g/12oz cooked smoked chicken
  • 1 small red onion
  • 1 ripe papaya
  • 100g/4oz bean sprouts
  • 150g/5oz watercress

For the dressing:

  • 100ml /4floz Rubicon Papaya Juice
  • Finely grated zest and juice of 1 lime
  • 3tbsp extra virgin olive oil
  • 1 tsp wholegrain mustard
  • 1 tsp maple syrup

Papaya & Pomegranate Tartlets

These fluffy fruit tartlets make a delicious light snack over lunch or a tasty after dinner treat.

Method

1. Arrange the tartlet cases onto a tray. Roughly chop the papaya and place in a blender with the lime marmalade. Blend until smooth. Spread a little of this fruit puree over the base of each tartlet case.

2. Whip the cream until it forms soft peaks, fold in the Rubicon Papaya Juice Drink and whip again for a few seconds until mixture holds its shape.

3. Spoon over the fruit puree and level with the back of a spoon.

4. To decorate, arrange fresh slices of papaya on top of each tart and scatter with a few pomegranate seeds.

Ingredients:

  • 8 individual pastry tartlet cases
  • 1 fresh ripe papaya
  • 300ml/1/2pt double cream
  • 3tbsp Rubicon Papaya Juice

Papaya Colis

This fruity sauce will liven up ice-cream or natural yogurt. Or why not try a little stirred into your favourite smoothie recipe for a hint of the exotic!

Method

1. Peel the skin off the papaya, slice in half and scoop out the seeds using a small spoon. Roughly dice the flesh and place in a food processor with Rubicon Papaya Juice Drink, honey and lime juice.

2. Liquidise until smooth then pass through a fine sieve. Keep stored in a covered container for up to 3 days in the fridge. Serve spooned over yogurt, ice cream or drizzled over fresh fruit.

  • 2 tbsp clear honey
